Deli-style pasta salad
Ingredients/Components
- pkg - 7 oz
- dry mustard
- snipped parsley - 1/4 c
- small zucchini, thinly sliced - 1 item
- white wine vinegar - 1/4 c
- Parmesan cheese - 1/4 c
- dried crushed oregano
- olive oil
- medium tomatoes, cut into wedges - 2 item
- chopped green or red pepper - 1/2 c
- clove minced garlic - 1 item
- crushed basil - 1 tsp
- sliced Genoa salami - 6 oz
- Provolone, cut into 1/4-inch cubes - 6 oz
- small onion, thinly sliced and separated - 1 item
- 1/2 ??? sliced and pitted olives, drained - 1 item
How to make deli-style pasta salad:
Dressing:1/2 c. olive oil1/4 c. white wine vinegar1 1/2 tsp. dry mustard1 1/2 tsp. dried crushed oregano1 tsp. crushed basil1 clove minced garlic Cook macaroni. Drain and rinse with cold water. Drain again. In a large bowl, mix macaroni, Provolone cheese, salami, zucchini, onion, pepper, olives, Parmesan and parsley. Pour dressing over salad and toss lightly. Chill 4 hours or overnight. Add tomato prior to serving.Dressing: Mix dressing ingredients in a closed jar and shake well.
