Ingredients/Components

  • sugar - 1/4 c
  • salt - 1/4 tsp
  • water - 1/4 c
  • vinegar - 1/4 c
  • eggs, well beaten - 2 item
  • prepared mustard - 1 tsp
  • dash of pepper - 1 item
  • salad dressing - 1 c
  • chopped sweet pickles - 1/2 c
  • hard-cooked eggs, chopped - 4 item
  • minced onion - 1 Tbsp
  • chopped green peppers - 1 Tbsp
  • cubed, cooked potato - 4 c

How to make danish potato salad:

Combine first 6 ingredients. Bring to a boil. Reduce heat; gradually beat in well beaten eggs. Cook, stirring constantly, until slightly thickened, about 5 minutes. Beat in salad dressing. Toss together remaining ingredients. Pour on dressing; toss gently. Adjust seasoning, if necessary. Yields 6 servings.
