Curried seafood salad
Ingredients/Components
- lemon juice - 2 Tbsp
- curry powder - 1 tsp
- salad dressing - 1/2 c
- celery, chopped - 1/2 c
- parsley, minced - 1/2 c
- shrimp, cleaned and cooked - 1 c
- can tuna, broken up - 6 or
- olives, cut up, ripe or stuffed - 1/4 c
- cold rice, cooked - 3 c
- low-fat French dressing - 2 3
How to make curried seafood salad:
Chill tuna and shrimp. Add celery and olives. Blend together and add salad dressing, lemon juice and curry powder. Toss together rice, French dressing and parsley. Spoon onto serving platter; top with seafood mixture.Parsley adds more than color and flavor to foods; it is rich in vitamin C, magnesium, potassium, iron and zinc.
