Ingredients/Components
- sugar - 2 Tbsp
- salt - 1/4 tsp
- vinegar - 1 tsp
- pepper - 1/8 tsp
- jar chopped pimiento, drained - 1 item
- chopped celery - 1/4 c
- chopped green pepper - 1/4 c
- prepared mustard - 1/4 c
- mayonnaise - 1/2 c
- chopped green onions - 1/3 c
- parsley optional - 1 item
- sweet pickle relish - 1/4 c
- hard-boiled eggs, diced - 3 item
- milk if needed - 1 2
- cooked rice, chilled
- tomatoes optional - 1 item
How to make country rice salad:
Salad:3 c. cooked rice, chilled1/4 c. sweet pickle relish1 jar chopped pimiento, drained1/3 c. chopped green onions1/4 c. chopped green pepper1/4 c. chopped celery3 hard-boiled eggs, diced tomatoes (optional) parsley (optional) Dressing: Combine all ingredients, except milk; set aside.Salad: Combine all ingredients. Pour dressing over; stir gently. Add milk if mixture is dry. Chill several hours. Garnish with parsley and cherry tomatoes before serving.
