Ingredients/Components

  • curry powder - 1 tsp
  • salt and pepper to taste - 1 item
  • mayonnaise - 2 c
  • green onions - 5 item
  • chicken stock - 4 c
  • fresh chopped parsley - 1/4 c
  • celery stalks, diced - 3 item
  • uncooked long-grain rice - 2 c
  • jars oil marinated artichoke hearts - 3 oz
  • jar sliced pimiento-stuffed olives - 1 oz
  • reserved artichoke marinade - 1 item

How to make cold rice salad:

Bring chicken stock to a boil; stir in rice and return to a boil. Lower heat, cover and simmer for 20 minutes or until liquid is absorbed and rice is tender. Cool.

Drain artichokes, reserving marinade, and chop. Add to rice with the onions, olives, celery and parsley. Combine reserved marinade with curry, mayonnaise, salt and pepper. Toss with rice to mix thoroughly. Refrigerate until ready to serve. Serves 12 to 16.
