Cold pasta salad
Ingredients/Components
- sugar - 1/4 c
- red wine vinegar - 1/2 c
- chopped onion
- olive oil - 3/4 c
- ground black pepper - 1/2 tsp
- dried oregano - 1 Tbsp
- chopped green peppers - 2 c
- can pitted black olives - 1 item
- chopped fresh tomatoes - 2 c
- 1 box rotini screws; better using multi-colored, cooked and drained - 6 c
- can drained and rinsed chickpeas - 1 item
- cubed Provolone cheese - 3/4 c
- sliced hard salami - 1/2 lb
- pepperoni, cut into 1/2 strips - 1/2 lb
- can chopped anchovy filets - 1 item
How to make cold pasta salad:
Cook pasta. In small bowl, whisk together oil, vinegar, sugar and seasoning. In large serving bowl, combine pasta, dressing and remaining ingredients. Cover and refrigerate.Recipe categories: Salads, Chicken, Penne.
