  • salt - 1 Tbsp
  • vinegar - 2 Tbsp
  • black pepper - 1 Tbsp
  • crushed red pepper - 1/2 tsp
  • green pepper, cut in pieces - 1 item
  • large onion, cut in pieces - 1 item
  • thawed chitterlings - 10 lb

How to make chitterlings:

Wash chitterlings. Pull off all excess fat. Split open chitterlings and clean thoroughly. Wash in several waters.

Put chitterlings, green pepper, first onion, red pepper, salt and black pepper in pot with water. Cover pot with tight lid. Simmer for several hours until tender. Drain. Heat a small quantity of cooking oil or bacon drippings in a frying pan; add chitterlings (cut in 1 to 2-inch pieces) and vinegar. Stir well while frying lightly. Add salt and pepper to taste. Remove from heat and serve.
