Chicken breasts in mushroom sauce
Ingredients/Components
- butter or margarine - 1/4 c
- whipping cream - 1/2 c
- lemon juice - 1 item
- pepper - 1 item
- fresh mushrooms, sliced - 2 c
- boneless, skinless chicken breasts - 4 item
- fresh chives, snipped - 2 tsp
How to make chicken breasts in mushroom sauce:
Marinate chicken in lemon juice and pepper for 30 minutes. Cook chicken breasts in hot butter or margarine over medium heat for 8 minutes or until golden brown and cooked through; turn occasionally. Remove chicken from pan and place on a warm platter; cover to keep warm. Reserve drippings in pan. Add the mushrooms and chives to the pan and drippings. Cook and stir until mushrooms are tender. Stir in the whipping cream; boil gently until slightly thickened, scraping the browned bits from the pan. Spoon the sauce over warm chicken breasts and serve.
