Blackberry cobbler
Ingredients/Components
- sugar - 2 Tbsp
- milk - 1 c
- butter or margarine - 2 Tbsp
- salt - 1/2 tsp
- cornstarch - 3 Tbsp
- baking powder - 3 tsp
- boiling water - 2 c
- shortening - 1/2 c
- sifted flour - 2 c
- fresh blackberries - 4 c
- Sift together flour, sugar, baking powder and salt
- cinnamon or 1/2 tsp - 1 tsp
How to make blackberry cobbler:
Prepare soft dough. Sift together flour, sugar, baking powder and salt. Blend in shortening until mixture resembles cornmeal. Stir in milk to make a soft dough. Drop spoonfuls of dough over hot fruit filling.Filling:1 1/3 to 1 1/2 c. sugar (depending on natural sweetness of berries)3 Tbsp. cornstarch2 c. boiling water4 c. fresh blackberries2 Tbsp. butter or margarine1 tsp. cinnamon or 1/2 tsp. nutmeg Mix together in saucepan sugar and cornstarch. Stir in boiling water gradually. Bring to a boil and boil 1 minute. Add blackberries. Pour into a 10 x 10 x 2-inch baking dish. Dot with butter or margarine and sprinkle with cinnamon or nutmeg.
