Beef stroganoff
Ingredients/Components
- sour cream - 1 c
- flour - 2 Tbsp
- Worcestershire sauce - 1 Tbsp
- large onions, chopped - 2 item
- salt and pepper - 1 item
- tomato paste optional - 1 Tbsp
- stick butter or margarine - 1/2 item
- mushrooms, cut into quarters - 1 lb
- to 2 garlic cloves, finely chopped - 1 item
- lean round steak or other tender steak - 3 lb
- beef stock broth or consomme - 1 c
- garnish with minced parsley - 1 item
How to make beef stroganoff:
Slice beef into 1/8-inch strips, lengthwise. Butcher can do this. Heat butter in a large frying pan and cook onions and garlic, stirring constantly, until golden. Add mushrooms and saute until golden. Remove onions, garlic and mushrooms to a small bowl.Add meat to the pan. Cook over high heat until brown. Sprinkle flour over meat. Return the onion mixture to pan and stir in tomato paste, stock and Worcestershire sauce. Continue to stir until meat is tender and gravy is thickened.
Just before serving, stir in sour cream. Reheat but do not boil. Season to taste. Serve at once over noodles or rice and garnish with parsley.
