- nutmeg - 1/4 tsp
- salt - 1/4 tsp
- baking soda - 1 tsp
- butter, softened - 1/2 c
- sugar - 1/2 c
- egg, lightly beaten - 1 item
- mashed banana - 1 c
- chopped walnuts or pecans - 3/4 c
How to make banana muffins:In a small bowl, sift together flour, nutmeg, salt and baking soda. Add nuts and stir to coat. In a medium bowl, cream butter and sugar until smooth. Add egg and mashed banana to butter mixture and stir to blend. Add flour mixture, mixing just until dry ingredients are moistened. Fill greased muffin tins two-thirds full. Bake at 375° for 20 minutes. Yield: 12 muffins.
