Ingredients/Components

  • hot water - 1 c
  • olive oil - 1/4 c
  • minced onion - 2 Tbsp
  • chicken bouillon cubes - 2 item
  • black pepper - 1/4 tsp
  • minced garlic - 1 tsp
  • white vinegar - 2 Tbsp
  • tarragon leaves, crushed - 2 tsp
  • small red potatoes, cut in quarters - 2 lb

How to make baked potato salad:

Preheat oven to 350°. Combine water, bouillon, minced onion and minced garlic; let stand for 10 minutes. Add oil, vinegar, tarragon and black pepper. Place potatoes in shallow 3 quart casserole. Pour dressing over all, tossing to coat.

Bake, uncovered, until potatoes are fork tender, about 40 minutes, stirring occasionally. Serve at room temperature. Makes 4 cups, about 6 servings.
