Marinated vegetable salad
Ingredients/Components
- sugar
- water - 2 Tbsp
- oil - 3/4 c
- vinegar - 1 c
- diced onion - 1 c
- chopped celery - 1 c
- salt and pepper - 1 item
- green peppers, chopped - 1 c
- can white Shoe Peg corn, drained - 1 item
- can LeSueur peas, drained - 1 item
- French-style green beans - 1 c
- small jar sliced pimento - 1 item
- can diagonal cut or kitchen cut green beans, drained - 1 item
- small can water chestnuts* - 1 item
How to make marinated vegetable salad:
Dressing:1 c. sugar3/4 c. oil1 c. vinegar salt and pepper2 Tbsp. water Heat sugar, oil, vinegar, salt, pepper and water until dissolved. Cool, then pour over vegetables in glass bowl. Refrigerate at least overnight. (All cans of vegetables are regular size unless stated otherwise.) May garnish with pepper and onion rings.*I add water chestnuts when I want to make a larger amount.
