  • cinnamon - 3/4 tsp
  • baking powder - 1 tsp
  • baking soda - 3/4 tsp
  • vegetable oil - 3 Tbsp
  • all-purpose flour
  • firmly packed brown sugar - 1/2 c
  • chopped walnuts - 1/2 c
  • egg white - 1 item
  • skim milk - 1/2 c
  • unsweetened applesauce - 1 c
  • margarine, melted - 1/2 Tbsp
  • oat bran - 3/4 c
  • oats
  • oats old fashioned uncooked - 3/4 c

How to make applesauce oatmeal muffins:

Topping:1/8 c. oats1/8 c. oat bran1 Tbsp. firmly packed brown sugar1/8 tsp. cinnamon1/2 Tbsp. margarine, melted Heat oven to 400°. Line 12 medium muffin cups with paper baking cups. Combine oats, oat bran, flour, cinnamon, baking powder, baking soda and nuts. In another bowl, combine applesauce, milk, brown sugar, oil and egg white; mix with oat mixture just until dry ingredients are moistened; combine the topping ingredients and sprinkle evenly over batter. Bake 20 to 22 minutes or until deep golden brown. Serve warm.

Note: To freeze, wrap muffins securely. To reheat frozen muffins in microwave oven, microwave at High 25 to 30 seconds for each muffin. Makes 1 dozen.
