Apple bread
Ingredients/Components
- sugar - 2/3 c
- vanilla
- oil - 1/2 c
- pumpkin pie spice - 1 tsp
- sifted all-purpose flour
- grated orange peel - 1 Tbsp
- eggs, slightly beaten - 2 item
- rum extract - 2 tsp
- each baking soda and baking powder - 2 tsp
- medium apples, grated - 2 item
- each currants and chopped pecans - 1 c
- pecan halves and orange peel - 1 item
How to make apple bread:
In a bowl, combine dry ingredients, pecans and currants. Add oil, eggs, vanilla and rum extract. Stir just to blend. Fold in apples and orange peel. Spoon into greased and floured 9 x 5 x 3-inch loaf pan. Decorate top with pecans and orange peel. Bake at 350° for 55 to 65 minutes until toothpick comes out clean.
