Ingredients/Components

  • clove garlic - 1 item
  • rice vinegar - 1 Tbsp
  • extra virgin olive oil - 4 tsp
  • small red onion - 1/2 item
  • Serrano chile peppers - 3 item
  • sugar and salt to taste - 1 item
  • fresh marjoram - 1 Tbsp
  • small zucchini, ends trimmed - 2 item
  • small carrot, peeled - 1 item
  • tomatillos available in specialty section in produce department - 2 item
  • medium, ripe tomato - 1 item

How to make zucchini salsa:

Finely chop zucchini, carrot, tomato, garlic, peppers and tomatillos (which have been husked and rinsed). Dice onion. Rinse in a strainer under cold water and drain. Combine all ingredients and season to taste. Add more chile peppers for hotter salsa. Let stand at room temperature at least an hour before serving. Makes 2 cups. Serve with tortilla chips or use as a condiment.
