- cinnamon - 1 tsp
- cream cheese - 1 (8
- eggs - 3 item
- vanilla - 1 tsp
- pkg - 8 oz
- salt - 1 tsp
- flour - 3 c
- oil - 1 c
- soda - 1 tsp
- baking powder - 1/4 tsp
- chopped walnuts - 2 c
- grated zucchini - 2 c
- margarine - 1/2 c
- Add grated zucchini and mix well
How to make zucchini cake:
Beat eggs, sugar, oil, vanilla, cinnamon, salt, soda, baking powder and cream cheese until foamy. Add grated zucchini and mix well. Add flour and beat 2 minutes. Fold in nuts.Turn batter into greased and floured Bundt pan. Bake at 325° for 1 hour.Frosting for Zucchini Cake:1 lb. pkg. powdered sugar8 oz. pkg. cream cheese1/2 c. margarine2 Tbsp. vanilla Combine powdered sugar, cream cheese, margarine and vanilla. Beat until fluffy. Spread on cooled cake. (I only use 1/2 of this recipe.)
