  • cinnamon - 1 tsp
  • cream cheese - 1 (8

  • vanilla - 1 tsp
  • pkg - 8 oz
  • salt - 1 tsp
  • flour - 3 c
  • oil - 1 c
  • soda - 1 tsp
  • baking powder - 1/4 tsp
  • chopped walnuts - 2 c
  • grated zucchini - 2 c
  • margarine - 1/2 c
  • Add grated zucchini and mix well

How to make zucchini cake:

Beat eggs, sugar, oil, vanilla, cinnamon, salt, soda, baking powder and cream cheese until foamy. Add grated zucchini and mix well. Add flour and beat 2 minutes. Fold in nuts.

Turn batter into greased and floured Bundt pan. Bake at 325° for 1 hour.Frosting for Zucchini Cake:1 lb. pkg. powdered sugar8 oz. pkg. cream cheese1/2 c. margarine2 Tbsp. vanilla Combine powdered sugar, cream cheese, margarine and vanilla. Beat until fluffy. Spread on cooled cake. (I only use 1/2 of this recipe.)
