Ingredients/Components

  • chopped fresh parsley - 1 item
  • salt and pepper - 1 item
  • French dressing
  • head fresh cauliflower - 1/2 item
  • large cucumber - 1 item
  • large new potatoes, washed and peeled - 2 item
  • large carrots, washed and peeled - 3 item
  • fresh, green or yellow string beans, washed and cut - 1 c
  • newly shelled peas - 1 c

How to make vegetable salad:

Dice the potatoes and carrots into cubes about the size of 2 peas. Cook them in boiling, salted water, together with the cut string beans and the peas, for about 6 to 7 minutes. They should be barely tender, still firm.

Break the cauliflower into tiny flowerets and cook it the same way until it is just only tender and still a little crisp. Peel the cucumber, seed it and dice it.

When the cooked vegetables are cool, toss all the vegetables together and season well with French dressing. Add a considerable amount of freshly ground pepper and some salt. Chill the salad for an hour or two. Toss again and turn it out on a platter. Garnish with fresh, chopped parsley. Makes 6 to 8 servings.
