  • eggs - 2 item
  • half and half - 1 c
  • water - 1/2 c
  • margarine - 2 Tbsp
  • ground beef - 1 lb
  • tomato sauce - 8 oz
  • medium onion, chopped - 1 item
  • corn chips - 1 pkg
  • grated Monterey Jack cheese - 8 oz
  • taco mix - 1 pkg
  • green chili pepper - 1 item

How to make taco casserole:

Cook the ground beef in the microwave for 5 minutes on High. Drain. Mix the margarine, onion and green chili pepper together; cook on High for 1 to 1 1/2 minutes, then add the tomato sauce, taco mix and the water. Cook on High for 1 1/2 to 2 minutes. Beat 2 eggs with a wire whisk. Add 1 cup half and half, then add to other ingredients.

Use microwave dish and layer with chips, ground beef, cheese and tomato sauce; repeat. Microwave on High for 15 minutes. Top with sour cream and 1/2 cup Cheddar cheese. Microwave 2 to 4 minutes on High. Watch carefully.
