Strawberry pancakes
Ingredients/Components

- sour cream - 1/2 pt
- salt - 1 tsp
- flour - 1 c
- butter - 3 Tbsp
- melted butter - 2 Tbsp
- lemon juice - 1 Tbsp
How to make strawberry pancakes:
Filling:1 (8 oz.) pkg. cream cheese1/2 pt. sour cream Topping:2 (10 oz.) pkg. frozen sliced strawberries3 Tbsp. butter1 Tbsp. lemon juice2 Tbsp. sugar Preheat oven to 350°.Crepes: Mix flour, eggs, salt, milk, butter and sugar in small bowl. Beat until smooth. Preheat a 5 or 6-inch skillet over medium heat. Butter the skillet lightly and add 1/4 cup of the crepe batter. Distribute evenly over bottom of pan. When lightly browned, turn. Stack finished crepes between waxed paper.
Filling: Beat the cream cheese and fold in the sour cream. Add approximately 1 tablespoon of filling on top of crepe. Roll up and place in glass baking dish. Save any excess for serving time.
Topping: Heat strawberries, butter, lemon juice and sugar. Bring to a boil. Pour over crepes. Bake at 350° for 15 minutes.
Can be made ahead of time! Serves approximately 12.
