  • sugar
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • cocoa
  • baking soda - 1 tsp
  • vinegar - 1 Tbsp
  • shortening - 1/2 c
  • red food coloring - 1/4 c
  • cake flour
  • buttermilk* - 1 c

How to make red velvet cake:

*Substitute for buttermilk 1 cup milk and 1 tablespoon lemon juice or vinegar.

Cream shortening with sugar and eggs; beat well. Make paste of food coloring and cocoa. Add immediately to the creamed mixture (if you delay it will thicken). Add buttermilk alternately with sifted flour and salt. Add vanilla. Put vinegar in the mixture, blending instead of beating. Bake in 2 greased 9-inch pans 25 to 30 minutes at 350°.
