  • chopped pecans - 2 c
  • granulated sugar
  • vanilla extract - 1 tsp
  • buttermilk - 1 c
  • baking soda - 1 tsp
  • vegetable oil
  • large eggs - 2 item
  • unsweetened cocoa powder - 1 tsp
  • self-rising flour
  • box confectioners sugar - 1 lb
  • cream cheese, softened - 10 oz
  • white vinegar - 1 tsp
  • 1 1/3 sticks butter, softened
  • red food coloring two 1 oz - 1/4 c

How to make red velvet cake:

Frosting:1/3 lb. (1 1/3 sticks) butter, softened10 oz. cream cheese, softened1 (1 lb.) box confectioners sugar2 c. chopped pecans Heat oven to 350°. Mix together all cake ingredients. Grease 3 (9-inch) round cake pans. Pour batter into cake pans; bake for 20 minutes. Test for doneness with a toothpick.

Frosting: Combine butter, cream cheese and confectioners sugar in a bowl; beat until fluffy. Add 1 1/2 cups pecans. Fill and frost cake when cool. Decorate top of cake with remaining 1/2 cup pecans.
