Raspberry delight
Ingredients/Components
- sugar - 1/3 c
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 3/4 c
- flour - 1 c
- cornstarch - 2 Tbsp
- water
- baking powder - 1/2 tsp
- soft butter - 1/2 c
- lemon juice - 2 Tbsp
- frozen raspberries, thawed and drained reserve syrup - 8 oz
How to make raspberry delight:
Sauce:1/2 c. water1/2 c. sugar2 Tbsp. cornstarch2 Tbsp. lemon juice Blend flour, sugar and butter. Press into 9 x 13-inch pan.Sprinkle raspberries and nuts over top. Beat eggs and sugar until fluffy. Add salt, baking powder, flour and vanilla. Spread over top. Bake at 350° for 30 minutes.
Sauce: Take syrup from raspberries and cook with water, sugar and cornstarch until thick. Remove from heat. Add lemon juice. Cool. Place dessert square on plate. Top with scoop of ice cream and dribble sauce over top. Serves 12.
