Potato medley
Ingredients/Components
- salt - 1/2 tsp
- water - 2 c
- vegetable oil - 1/4 c
- freshly ground pepper - 1/8 tsp
- Dijon mustard
- white wine vinegar - 3 Tbsp
- grated orange rind - 1 Tbsp
- chopped fresh dill - 1 Tbsp
- mustard seed - 1/2 tsp
- carrots, scraped and thinly sliced - 3 item
- zucchini, sliced 1/2 inch thick - 2 item
- new potatoes, sliced 1/4 inch thick - 4 item
How to make potato medley:
Place oil, vinegar, orange rind, Dijon mustard, mustard seed, salt and pepper in food processor; process until well blended. Set aside.Combine potatoes, carrots and water in a saucepan; bring to a boil. Cover, reduce heat and simmer 3 minutes. Add zucchini; cover and cook 3 minutes. Drain.
Combine vegetables, dressing and herbs, stirring to coat. Serve immediately. Yields 6 servings.
