Ingredients/Components

  • salt - 1/2 tsp
  • water - 2 c
  • vegetable oil - 1/4 c
  • freshly ground pepper - 1/8 tsp
  • Dijon mustard
  • white wine vinegar - 3 Tbsp
  • grated orange rind - 1 Tbsp
  • chopped fresh dill - 1 Tbsp
  • mustard seed - 1/2 tsp
  • carrots, scraped and thinly sliced - 3 item
  • zucchini, sliced 1/2 inch thick - 2 item
  • new potatoes, sliced 1/4 inch thick - 4 item

How to make potato medley:

Place oil, vinegar, orange rind, Dijon mustard, mustard seed, salt and pepper in food processor; process until well blended. Set aside.

Combine potatoes, carrots and water in a saucepan; bring to a boil. Cover, reduce heat and simmer 3 minutes. Add zucchini; cover and cook 3 minutes. Drain.

Combine vegetables, dressing and herbs, stirring to coat. Serve immediately. Yields 6 servings.
