- warm water - 1/4 c

- active dry yeast - 2 pkg
- mashed, cooked potatoes - 1 c
How to make potato chive rolls:
In cup, dissolve yeast and sugar in water; let stand until foamy. In large mixer bowl, combine sour cream, potatoes, eggs, salt and 2 cups of the flour. Add yeast and beat at medium speed for about 4 minutes. Stir in chives. Add 2 1/2 cups flour to make a stiff dough. Turn out onto floured surface and knead just long enough to work in remaining 1/2 cup flour and make dough elastic. Place in greased bowl and cover with damp cloth. Let rise until double in bulk (1 1/2 hours). Punch down dough.Shape dough into rolls and place on greased oblong baking pan. Cover. Let rise until double in bulk (45 minutes). Bake at 375° for 30 to 35 minutes or until deep golden brown. Yield: 2 dozen rolls.
