Ingredients/Components
- sugar - 2 c
- eggs - 4 item
- vanilla - 1 tsp
- buttermilk - 1 c
- baking powder - 1 tsp
- can crushed pineapple - 1 oz
- cake flour
- sticks soft butter - 2 item
- cake batter - 1 c
- soda, dissolved in milk - 1/2 tsp
- Filling:1 stick butter
How to make pineapple cake:
Filling:1 stick butter1 c. sugar1 c. cake batter1 (20 oz.) can crushed pineapple Cream butter and sugar well. Add eggs, one at a time, beating well after each addition. Add dry ingredients alternately with buttermilk. Add vanilla. Pour into 3 greased and lightly floured cake pans. Reserve 1 cup of batter for icing. Bake at 350° for 25 minutes.Icing: Drain pineapple and mix the juice with butter and sugar. Bring to a rapid boil. Add pineapple and return to a rapid boil, then reduce heat. Add cake batter slowly. Cook until thick, stirring constantly. Cool and cover layers.
