Pina colada bread pudding
Ingredients/Components
- pkg - 1 oz
- milk - 1/2 c
- brown sugar - 1/2 c
- coconut - 1 c
- can crushed pineapple - 1 1/4
- slightly beaten eggs - 3 item
- whipping cream optional - 1/2 c
- rum optional - 2 tsp
- dry whole wheat bread cubes about 4 slices - 3 c
How to make pina colada bread pudding:
In a large mixing bowl, combine eggs, cream cheese and brown sugar. Stir in bread cubes, undrained pineapple, coconut and milk. Place in a greased 10 x 6 x 2-inch dish. Bake in a 325° oven about 30 minutes or until a knife inserted near center comes out clean. Remove to wire rack; cool slightly.To serve, in a small mixer bowl, beat the cream cheese and rum on low speed until stiff peaks form (tips stand straight). Serve with warm pineapple mixture.
