Pecan fingers
Ingredients/Components
- eggs - 2 item
- vanilla - 1/2 tsp
- chopped pecans - 1 c
- salt - 1/2 tsp
- flour
- baking powder - 1/2 tsp
- powdered sugar - 3/4 c
- brown sugar, packed - 1 c
- lemon juice - 1 Tbsp
- butter, melted - 2 Tbsp
- orange juice - 3 Tbsp
- shortening half butter - 3/4 c
- Cream shortening and powdered sugar
How to make pecan fingers:
Heat oven to 350°. Cream shortening and powdered sugar. Blend in flour. Press evenly in ungreased 13 x 9 x 2-inch baking pan. Bake 12 to 15 minutes. Mix remaining ingredients. Spread over hot baked layer. Bake 20 minutes longer. Cool and cut into 3 1/2 x 1-inch bars. Makes 32. While warm, spread with Orange Lemon Icing.Orange Lemon Icing:1 1/2 c. powdered sugar2 Tbsp. butter, melted3 Tbsp. orange juice1 Tbsp. lemon juice Mix until smooth and spreading consistency.Recipe categories: Desserts, Cookie and brownie, Hand Formed cookies.
