Mixed bean salad
Ingredients/Components
- mustard - 1/2 tsp
- salt and pepper to taste - 1 item
- wine vinegar - 1/8 c
- olive oil - 1/4 c
- onion, chopped fine - 1/2 item
- green beans, cooked - 1/2 lb
- can black beans - 1 oz
- can chickpeas - 1 oz
- parsley, chopped fine - 1/4 c
- oregano or thyme - 1/4 tsp
- can white or kidney beans - 1 oz
- Marinade: juice of 1/2 lemon
How to make mixed bean salad:
Marinade: juice of 1/2 lemon1/8 c. wine vinegar1/2 tsp. mustard1/4 c. olive oil1/2 onion, chopped fine1/4 c. parsley, chopped fine1/4 tsp. oregano or thyme salt and pepper to taste Drain beans and rinse well. Mix ingredients for marinade and mix with beans. This salad is best if it sits in refrigerator for a while to allow flavors to penetrate beans.
