Mexican lasagne
Ingredients/Components
- eggs - 2 item
- salsa - 1 c
- can tomato sauce - 1 oz
- ground beef - 1 lb
- cottage cheese - 1 lb
- oregano - 1 tsp
- taco seasoning - 1 pkg
- floured or corn tortillas - 1 pkg
- mixed shredded Cheddar and Monterey Jack cheese
How to make mexican lasagne:
Heat oven to 375°. Brown meat and drain. Stir in salsa sauce and seasoning. Simmer and stir frequently for 5 minutes. In separate bowl, mix cottage cheese, eggs and oregano. Line bottom of lightly greased 13 x 9-inch baking pan with tortillas, overlapping edge. Layer with 1/2 meat mix and 1/2 cheese mixture over meat. Arrange remaining tortillas over top. Then repeat layer of meat and cheese mix. Spread with shredded cheese. Bake 30 to 35 minutes or until bubbly. Let stand 10 minutes before serving.Meatless: Omit ground beef; add extra cottage cheese. Add 1 green pepper, chopped.
