Ingredients/Components
- evaporated milk - 5 6
- ground beef
- cans tomato sauce - 2 oz
- salt and pepper - 1 item
- chopped tomatoes - 1 item
- medium onion, chopped - 1 item
- rice - 1 c
- can Cheddar cheese soup - 1 item
- chopped lettuce - 1 item
- can Ranch Style beans - 1 item
- mild picante sauce - 1/2 c
- Chili-O mix - 1 pkg
- small bag Doritos - 1 item
- sliced stuffed or black olives - 1 item
How to make mexican fiesta:
Meat Sauce: Saute onion and ground beef. Drain. Add tomato sauce, Chili-O mix and beans. Season with salt and pepper. Add picante sauce. Simmer for at least 30 minutes.Cook rice in 2 cups water and 1 teaspoon salt 20 minutes or until water is absorbed.
Cheese Sauce: Dilute soup with milk to desired thickness.
Crush chips. In a large serving dish, layer chips, rice, meat sauce and cheese sauce. Garnish with chopped lettuce and tomatoes. Add olives, if desired.
Note: This is a good meal to serve when your Aggies come home with their friends because it serves 8 heartily.
