Ingredients/Components

  • sour cream - 1 c
  • salt - 2 tsp
  • chopped onion - 1 c
  • chicken broth - 1 c
  • oregano - 1/2 tsp
  • grated Cheddar cheese - 2 c
  • tomato sauce - 1 can
  • ground cumin - 1/2 tsp
  • cooked rice - 3 c
  • diced green chilies - 1 can
  • corn chips
  • chicken breasts 6 halves, cooked, cut in large bite pieces - 3 item

How to make mexican chicken casserole:

Stir together rice and sour cream. Spoon into 2 1/2 quart casserole. Sprinkle with 1 cup of the grated cheese. Mix chicken with sauce and pour over rice. Sprinkle remaining cheese on top. Top with corn chips and bake at 350° for 30 minutes. Serves 6 to 8.
