Ingredients/Components
- salsa - 1/2 c
- lite mayonnaise - 1/2 c
- celery
- chicken, cooked and cubed - 3 c
- lite sour cream - 1/2 c
- box Success Spanish Rice - 1 item
- lite Monterey Jack cheese, grated and divided - 1 c
- corn chips, crumbled - 1 c
How to make mexican chicken casserole:
Prepare rice according to directions. Preheat oven to 350°. In large bowl, toss rice, chicken, celery and 3/4 of cheese and the salsa. In small bowl, mix sour cream and mayonnaise. Add to rice/chicken mixture. Put in large baking dish and sprinkle with remaining cheese and chips. Bake until bubbly.Recipe categories: Main dish, Casseroles, Chicken breast.
