Light chicken salad
Ingredients/Components
- salt - 1/2 tsp
- nutmeg - 1/4 tsp
- vegetable oil - 1/3 c
- lemon juice - 1/3 c
- sliced green onions - 1/4 c
- sliced celery - 1 c
- cooked and cubed chicken
- minced fresh garlic - 1/2 tsp
- halved, seedless red grapes - 1 c
- shredded leaf lettuce - 4 c
How to make light chicken salad:
Salad:2 1/2 c. cooked and cubed chicken1 c. halved, seedless red grapes1 c. sliced celery1/4 c. sliced green onions4 c. shredded leaf lettuce In jar with lid, combine all ingredients for dressing. Shake to mix. In large bowl, combine all salad ingredients except lettuce. Toss salad with half of dressing. Cover; refrigerate at least 1 hour. Place lettuce on serving platter; top with salad.
