Curried rice salad
Ingredients/Components
- chicken Rice-A-Roni - 1 pkg
- green onions, chopped - 2 item
- green olives - 8 item
- black olives - 12 item
- jars marinated artichoke hearts, chopped save oil of 1 jar - 2 oz
- chopped pimento - 1/4 c
- chopped green pepper - 1/4 c
- chopped celery - 1/4 c
- mayonnaise
- lemon juice - 2 Tbsp
- curry powder - 1/2 3/4
How to make curried rice salad:
Dressing:1/3 c. mayonnaise2 Tbsp. lemon juice1/2 to 3/4 tsp. curry powder Cook Rice-A-Roni according to package directions, omitting margarine. Cool. Mix mayonnaise, reserved artichoke oil, lemon juice and curry powder. Add all ingredients and dressing to rice and chill. Keeps well in refrigerator for 3 to 4 days.
