Ingredients/Components
- vanilla - 1 tsp
- salt - 1/4 tsp
- confectioners sugar - 1 lb
- baking powder - 3 tsp
- all-purpose flour - 3 c
- egg whites, stiffly beaten - 4 item
- coconut milk - 1 c
- fresh grated coconut - 1 c
- butter or 1/2 c - 1 c
- well beaten egg yolks - 4 item
How to make coconut cake:
Sift flour with baking powder and salt 3 times. Cream butter and sugar thoroughly until light and fluffy. Add egg yolks and beat well. Add flour and coconut milk alternately, a small amount at a time, beating after each addition until smooth. Add vanilla and coconut. Fold in egg whites that have been beaten. Bake in 3 large cake pans at 350° for about 30 to 35 minutes. Spread with Seven Minute Icing; sprinkle with fresh grated coconut.Recipe categories: Desserts, Cakes, Egg.
