Ingredients/Components

  • milk - 1/3 c
  • salt - 1/4 tsp
  • cornstarch - 2 Tbsp
  • all purpose flour - 1 c
  • baking powder - 1-1/2 tsp
  • butter or margarine, melted - 1/3 c
  • ground nutmeg - 1/4 tsp
  • thawed frozen unsweetened apple juice concentrate - 2 Tbsp
  • no-sugar-added raspberry pourable fruit** - 1/2 c
  • fresh raspberries 2-1/2 c - 1 pt
  • fresh blueberries or strawberries, sliced 2-1/2 c - 1 pt

How to make berry cobbler:

Preheat oven to 375 degrees. Combine berries and cornstarch in medium bowl; toss lightly to coat. Add pourable fruit; mix well. Spoon into 1-1/2-quart or 8-inch square baking dish. In a medium bowl, combine flour, baking powder and salt. Add milk, butter and concentrate; mix just until dry ingredients are moistened. Drop six heaping tablespoons of batter evenly over berries; sprinkle with nutmeg. Bake 25 minutes or until topping is golden brown and fruit is bubbly. Cool on wire rack. Serve warm or at room temperature. Makes 6 servings.

*One (16-ounce) bag frozen raspberries and one (16-ounce) bag frozen blueberries or strawberries may be substituted for fresh berries.

**1/3 cup raspberry fruit spread combined with 3 tablespoons warm water may be substituted.
