Ingredients/Components

  • sugar - 1 c
  • eggs - 2 item
  • chopped pecans - 1 c
  • salt - 1/2 tsp
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • all-purpose flour - 2 c
  • mashed ripe bananas - 2 c
  • shortening or oil - 1/2 c

How to make banana-nut cake:

Cream shortening; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Add bananas and mix until smooth. Combine flour, baking powder, soda and salt; add to creamed mixture, stirring until just moistened. Stir in chopped pecans. Pour batter into a greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350° for 1 hour and 15 minutes. Cool in pan 10 minutes. Remove cake to wire rack to complete cooling. Yield: one 9-inch loaf.
