Banana cream pie
Ingredients/Components
- sugar - 2/3 c
- half and half - 1 c
- vanilla extract - 1 tsp
- butter - 2 Tbsp
- cornstarch - 1/4 c
- egg yolks - 3 item
- dash of salt - 1 item
- milk, scalded - 2 c
- meringue - 1 item
- ripe bananas, thinly sliced - 2 item
- baked 9-inch pastry shell - 1 item
- banana extract optional - 1/4 tsp
How to make banana cream pie:
Combine sugar, salt and cornstarch in a heavy saucepan. Beat egg yolks and half and half at medium speed of an electric mixer; add to sugar mixture. Pour hot milk slowly into egg mixture, stirring constantly. Cook over medium heat, stirring constantly until thickened. Remove from heat; add butter, vanilla and, if desired, banana extract. Pour one-third of mixture into baked pastry shell and layer with banana slices. Repeat layers, ending with filling. Cover with wax paper; make meringue. Remove wax paper.
