Peaches in champagne
Ingredients/Components
- plus 1 c - 2 Tbsp
- bottle champagne - 1/2 item
- very ripe peaches - 8 item
- white Riesling wine - 1/2 c
How to make peaches in champagne:
Peel the peaches. Halve 3 peaches and sprinkle with 2 tablespoons sugar. Set aside. Dice the rest of the peaches. Crack peach pits (vise grips help here). Take out inner seeds and peel. Crush the seeds in a mortar. Add the diced peaches to the seeds and mash together or puree in a blender. Add 1 cup sugar, mix and force through a sieve.Add champagne and Riesling; gently stir, taking care not to release too many of the bubbles. Place 1/2 peach in each glass and fill with pureed peaches and wine. Serves 6.
