  • salt - 1/2 tsp
  • snipped parsley - 1 Tbsp
  • ground cumin - 1/4 tsp
  • medium cucumbers - 2 item
  • green onions with tops, chopped - 2 item
  • medium tomatoes, chopped - 2 item
  • unflavored yogurt - 1 c

How to make cucumber-tomato salad:

Cut cucumbers lengthwise into halves. Scoop out seeds and cut cucumbers into 1/2 inch pieces. Mix cucumbers, tomatoes, onions and parsley. Cover and refrigerate at least 4 hours but no longer than 24 hours. Mix yogurt, salt and cumin. Cover and refrigerate at least 4 hours and no longer than 24 hours. Drain vegetables and fold into yogurt mixture. Garnish with additional chopped cucumbers and tomatoes if desired.
