Cucumber-tomato salad
Ingredients/Components
- salt - 1/2 tsp
- snipped parsley - 1 Tbsp
- ground cumin - 1/4 tsp
- medium cucumbers - 2 item
- green onions with tops, chopped - 2 item
- medium tomatoes, chopped - 2 item
- unflavored yogurt - 1 c
How to make cucumber-tomato salad:
Cut cucumbers lengthwise into halves. Scoop out seeds and cut cucumbers into 1/2 inch pieces. Mix cucumbers, tomatoes, onions and parsley. Cover and refrigerate at least 4 hours but no longer than 24 hours. Mix yogurt, salt and cumin. Cover and refrigerate at least 4 hours and no longer than 24 hours. Drain vegetables and fold into yogurt mixture. Garnish with additional chopped cucumbers and tomatoes if desired.Recipe categories: Low protein, Lunch/snacks, Low sodium.
