Coconut pound cake
Ingredients/Components
- sugar - 3 c
- eggs - 6 item
- milk - 1 c
- butter or margarine
- flaked coconut - 2 c
- almond extract - 1 tsp
- sifted flour - 3 c
- coconut extract - 1 tsp
How to make coconut pound cake:
Separate eggs, placing whites in bowl and yolks in a large bowl. Preheat oven to 300°. Grease a 10-inch tube pan.With electric mixer at high speed, beat egg yolks with shortening until well blended. Gradually add sugar, beating until light and fluffy. Add extracts.
At low speed, beat in flour (in fourths) alternately with milk (in thirds), beginning and ending with flour. Beat egg whites just until stiff peaks form. Fold egg whites into batter. Add coconut and blend well.
Bake 2 hours or until cake tester inserted near center comes out clean. Cool in pan 15 minutes.
