  • sugar - 2/3 c
  • vanilla - 1/2 tsp
  • salt - 1/4 tsp
  • flour - 1/3 c
  • butter - 2 Tbsp
  • cornstarch - 1/4 c
  • scalded milk - 2 c
  • beaten egg yolks save whites for topping* - 3 item

How to make vanilla cream pie:

Mix flour, sugar and salt. Add the scalded milk and cook until it starts to get thick. Add beaten egg yolks and cook until thick. Remove from heat; add butter and vanilla. Cool and put in a baked pie shell and top.

*Add 6 tablespoons sugar to whites and beat well.

Other variations - Butterscotch: Use 1 cup brown sugar instead of white; add 3 tablespoons butter.

Coconut: Add 1 cup moist coconut; sprinkle 1/2 on top and brown.

Pineapple: Add 1/2 cup drained pineapple to vanilla cream. Can substitute pineapple flavoring for vanilla.
