Zucchini soup
Ingredients/Components
- butter - 1/4 c
- nutmeg - 1/4 tsp
- cans chicken broth - 2 item
- medium onion, chopped - 1 item
- light cream half and half - 1/2 c
- medium zucchini, sliced thin - 5 item
- to 1 can water - 1/2 item
How to make zucchini soup:
Saute onion and zucchini in butter; simmer for 15 minutes. Pour into blender, small amount at a time; blend until smooth. Add chicken broth, cream, nutmeg and salt and pepper to taste.
