Zucchini relish
Ingredients/Components
- sugar - 5 c
- salt - 4 Tbsp
- cornstarch - 2 Tbsp
- dry mustard - 1 Tbsp
- chopped onion - 4 c
- black pepper - 1 Tbsp
- green pepper, chopped - 1 item
- white vinegar
- turmeric - 1 Tbsp
- red pepper, chopped - 1 item
- chopped, peeled zucchini - 10 c
How to make zucchini relish:
Mix zucchini, onion, peppers and salt. Cover with water and let stand overnight. Drain.Mix other ingredients and add to zucchini mixture. Bring to a boil and boil slowly for 10 minutes. Seal in sterilized jars. Process 5 minutes in boiling water bath canner.
