Ingredients/Components
- half and half - 1 c
- salt - 1/2 tsp
- flour - 1/4 c
- butter - 2 Tbsp
- minced onion - 1 Tbsp
- dry sherry - 2 Tbsp
- rich chicken broth - 4 c
- cooked wild rice - 2 c
How to make wild rice soup:
For 2 cups cooked rice, use 2/3 cup uncooked rice; takes about 1 1/2 hours to cook. Melt butter in heavy saucepan. Saute onions. blend in flour. Gradually add broth, stirring constantly, until thickened. Stir in rice and salt. Simmer for 5 minutes. Blend in half and half, then dry sherry. Heat until hot.
