Whole wheat banana bread
Ingredients/Components
- sugar - 1/2 c
- vanilla extract - 1 tsp
- salt - 1/4 tsp
- baking soda - 1 tsp
- egg - 1 item
- all-purpose flour
- whole wheat flour - 1/2 c
- vegetable cooking spray - 1 item
- mashed ripe bananas about 2 medium - 1 c
- oil corn or canola - 1/4 c
How to make whole wheat banana bread:
Combine first 4 ingredients in a small bowl; stir well and set aside. Combine sugar and oil in a medium mixing bowl; beat at medium speed of an electric mixer 2 minutes or until well blended. Add egg; beat until light and lemon-colored. With mixer running at low speed, add flour mixture alternately with banana mixture, beginning and ending with flour mixture. Blend well after each addition. Stir in vanilla. Pour batter into 8 x 4 x 2-inch loaf pan coated with cooking spray.Bake at 350° for 45 minutes or until a wooden pick inserted in center comes out clean. Cool 15 minutes in pan on a wire rack, remove from pan and let cool completely on a wire rack. Yields 16 servings.
