  • milk - 1/2 c
  • water
  • stick butter - 1/2 item
  • small onion, chopped - 1 item
  • salt to taste - 1 item
  • whole cloves - 2 item
  • cinnamon sticks - 2 item
  • paprika optional - 1 tsp
  • green peas - 1/4 c
  • green beans, diced - 1/4 c
  • cardamom pods - 2 item
  • Basmati rice - 2 c
  • carrots, in 1/2-inch cubes - 1/4 c
  • cauliflower buds, diced - 1/4 c
  • garlic/ginger paste - 1 tsp
  • cumin powder optional - 1/2 tsp

How to make vegetable rice:

Wash and soak rice at least 15 minutes. Plunge carrots, beans and cauliflower in boiling water and blanch for 3 minutes. Drain and keep aside.

In a heavy skillet (with tight fitting lid), melt the butter over medium heat. Add the onions, cloves, cinnamon and cardamom and fry until onions turn golden. Stir in the garlic/ginger paste, salt, paprika and cumin powder. Fry for a few minutes.

Drain the rice thoroughly and add to the skillet; add milk and water. Bring to boil. Cover tightly and simmer over lowest heat for 10 minutes. After 10 minutes, very gently stir in the vegetables and ???. Cook for another 10 minutes. Turn off the heat and let it rest for 5 minutes. Decorate with fried almond slices.
