Tortilla soup
Ingredients/Components
- salt - 3/4 Tbsp
- cornstarch - 1/4 c
- water - 1/2 c
- clove garlic, minced - 1/2 item
- ground beef - 3/4 lb
- ground cumin - 1 tsp
- can cream-style corn - 1 oz
- rich chicken broth - 6 c
- can whole peeled tomatoes - 1 oz
- American cheese, shredded - 8 oz
- corn tortillas, cut into strips - 1 doz
- white onion, finely chopped - 1/3 c
How to make tortilla soup:
Bring chicken broth to a boil. Crush the tomatoes by hand and add, with juice, to broth. Add cumin, garlic, salt, pepper, corn and cheese.Dissolve cornstarch in water in a separate bowl and add slowly to boiling soup while stirring constantly. Reduce heat to low and simmer for 10 minutes.
Put a few tablespoons of cooking oil in a skillet and fry the tortilla strips; remove and place on paper towels to drain. Using the same skillet and oil, saute the beef with the onion until browned.
Drain off grease, turn off heat under soup, and add beef mixture to soup, then stir in about half of the fried tortilla strips.
Serve soup hot, garnished with remainder of fried tortillas.
