Sweet potato crisp
Ingredients/Components
- sugar
- eggs - 3 item
- vanilla - 1 tsp
- chopped pecans - 1/4 c
- salt - 1/4 tsp
- brown sugar - 1/4 c
- baking powder - 2 tsp
- soft butter - 1/2 c
- corn flakes, crushed - 3 c
- sweet potatoes, cooked and mashed - 3 c
- Topping:2/3 stick melted butter
How to make sweet potato crisp:
Topping:2/3 stick melted butter3 c. corn flakes, crushed1/4 c. brown sugar1/4 c. chopped pecans Filling: Beat eggs until lemon colored. Mix remaining ingredients in bowl. Put into a buttered baking dish. Bake at 400° for about 20 minutes. Remove from oven and add topping. Return to oven for 10 minutes.Topping: Combine all ingredients together and set aside.
